Tonkotsu launched in 2011 as a pop-up ramen restaurant after Ken and Emma, after their extensive travels, couldn’t find a Ramen they loved in London. Their first restaurant followed in 2012 and rapidly grew to 16 sites. Tonkotsu's chilli sauce that came with every dish was so popular that customers wanted to take it home. They perfected the recipe, jarred it and Tonkotsu chilli oils were born. Since then they've won a 3 star Great Taste Award and had rave reviews.
“To smear over this was their own chilli oil, an unctuous condiment full of sweet, soft-roasted garlic, dark toasted chilli notes and sesame seeds, and just the right amount of fire. It demanded to be spooned direct from pot to mouth. It's now available to buy in jars to take home, so the challenge is to find things it doesn't improve. Bacon? Check. Cheese? Check. Apple pie? Hell, why not?”
